Cut off the end of each leaf with a smaller knife and then use the same knife to peel away any layers that seem tough or discolored.

Second, using a really sharp paring knife, slice the stalk into thin discs. Then, chop them into small pieces and use your fingers to separate the pieces of cabbage as you drop them into a large bowl.
